Tomato and Basil Penne

INGREDIENTS

penne pasta noodles
tomato sauce / spaghetti sauce
fresh basil
garlic, chopped
onions, chopped
tomatoes, cubed
balsamic vinegar
mushrooms
parmesan cheese

COOKING INSTRUCTIONS

1. Cook pasta according to package instructions, set aside
2. Sauté garlic and onions
3. Add tomatoes and fresh basil
4. Add mushrooms
5. Add the tomato sauce or spaghetti sauce
6. Add 2 to 3 tbsps of balsamic vinegar
7. Add salt or sugar to taste
8. Add parmesan cheese

This is a very basic pasta dish and using this you can choose to add all other ingredients like capers, olives, eggplant, chicken and so many others. What is very important is that you have fresh basil and balsamic vinegar, all the rest (except for the tomato sauce) will just be adjuncts. I like balsamic vinegar on pasta sauces because it takes away much of the saltiness of tomato and leaves it with a very perfect sweet-acidic taste, that I really cannot describe but is yummy. The parmesan cheese makes the sauce thick and it also makes it a littl creamy. Just add salt and sugar to adjust the taste to your liking.

For noodle choice, you can really choose to use any other kind. I chose penne because penne is quite fun to eat. It is not messy and there is not much slurping involved. Haha!
