1. Heat oil and add atsuete until the oil is red and then remove the seeds
2. saute garlic and onion
3. Add pork chunks and liver chunks, and wait until they are browned
4. Add tomatoes, fish sauce, stock and paprika and bring everything to boil
5. When meat is tender, let it simmer and then add the potatoes, carrots and raisins
I am not a particularly a fan of Menudo, but I tried this dish because it is like "Adobo" and it's a classic Filipino dish that you have learn how to make. I was, actually, very proud of how my Menudo tasted. I mean, Menudo is not really a spectacular dish, but I sure liked how mine tasted --- so I'm happy. It is perfect when it's hot and it's good to be eaten on its's own, but it is so much better with hot rice.
