When I think of chili con carne, I think of my dad. My dad loves chili con carne, especially the chili bowl at Mexicalli. I thought of cooking this dish because I was inspired by my friend, Jason (of Wings & Wieners). I loved how his chili tasted and I wanted to see if I could create one, just like his, but I don't think I got even close because mine tasted differently. I put a lot of chili powder to make it really spicy. I love the zing it leaves on the mouth and that, I believe, is how chili is supposed to be. I also put a lot of tomatoes, garlic and onions because the onions are really lovely especially when they are caramelized.
You can eat this with rice, but you can also try to eat it on its own or with some bread or tortilla chips. I ate mine on its own and I could finish two bowls --- yummy!
