Honey-Soy Glazed Pork

INGREDIENTS

pork belly
1/2 cup water
3 tbsp soy sauce
1 1/2 tsp hoisin sauce
3 tbsp honey
1 1/2 tbsp chopped green onions
1 star anise
1 bay leaf
1 1/2 tbsp cornstarch in water
mushrooms
salt and pepper

COOKING INSTRUCTIONS

1. Combine all ingredients, except for the cornstarch, pork and mushrooms in a pan and bring to boil until you achieve a syrupy consistency. Season it with salt and pepper, to taste
2. Marinate pork belly, evenly and leave it overnight or for a few hours
3. Grill pork with mushrooms

If this is not your first time in this blog, you know that I always cook easy meals. I do this because I really do not have much time. I have patients that need to be attended to, I have a writing job and I have a husband who needs me --- haha. Anyway, this takes some time to do because you have to marinate the meat for a night, but cooking it is simple. All you have to do is to lay it on the grill and wait for it to cook. You can choose to skewer them with the mushrooms and probably add some quartered onions, but I did not bother doing that, anymore.

It's perfect with rice, especially when the rice is quite hot, but you can also eat this without it --- which is how I have most of my meals, anyway.
