Fish Fillet with Baby Corn and Black Bean

cream dory fish
1/4 cup oil
1 cup canned baby corn
2 tbsp oil
garlic, chopped
black beans
2 cups chicken stock
soy sauce
brown sugar

1. Dredge fish in cornstarch
2. Heat oil and pan fry fish and then let it drain in paper towels
3. To make the sauce: Heat oil, saute garlic then add beans
4. Add the chicken stock and then bring it to boil, then let it simmer for a few minutes
5. Season with soy sauce, brown sugar and pepper
6. Add cornstarch in water, to thicken the sauce
7. Add the fried fish and the corn, and let it simmer before you serve it.

This is a very simple dish to do and the ingredients is not so expensive. The actual cooking process is very straightforward, too. Add this, add that --- and you're all set. I am guessing you can use other vegetables other than young corn, but young corn is nice and perfect for the very tender cream dory. The sauce is quite tasty so I couldn't eat it on its own, but since it was light, I didn't really mind eating it with rice, Anyway, we eat brown rice at home, so it's healthy.
